Okonomiyaki (お好み焼き)

I am not raised in Kansai (Western Japan). So I learned this recipe from my friend from Kansai area. You will be able to make “good” okonomiyaki without any special ingredients. Ingredients (for 3-4 servings) (A) 200g of all purpose flour (A) 2 tbsp of potato starch (A) 1 tsp of baking powder 250 mL of Dashi Broth (or 1 tbsp of Dashi powder and 250 mL of water) 150 g of grated potato 1 tbsp of sake 5 eggs 5 sheets of thinly sliced pork shrimps, squid, etc. 600 g of cabbage (chopped) Bonito flakes and aonori for topping Okonomiyaki sauce Mayonnaise Instructions Add all ingredients (A) in a […]

Potato Salad (ポテトサラダ)

My husband did not like potato salad. Since I made it with this recipe, he changed his mind. Japanese mayonnaise is highly recommended. Ingredients (3~4 servings) Potatoes: 3~4 (approximately 400 g) Eggs: 2 (boiled) Cucumber: 1 Onion: 1/2 Carrot: 3~4 cm Salt: 1 tsp Rice vinegar: 2~3 tbsp Mayonnaise: 4 tbsp ~ Black pepper: 2 dashes Instructions Steam potatoes then peel their skins. Mush them with heating over low heat to evaporate their moisture. Add rice vinegar. Then cool them down. Cut boiled eggs into small pieces. Thinly slice a cucumber and an onion. Broccoli Salad with Wasabi Dressing (ブロッコリーサラダ)

Wasabi dressing in this recipe goes well with every vegetable.  Ingredients 1 head of broccoli 8 prawns (Chicken is also tasty!) 2 soft boiled eggs 2 avocados 3 tablespoons of mayonnaise 1 tablespoon of soy sauce 2 teaspoons of wasabi 1 tablespoon of lemon juice salt for taste Instruction Boil broccoli and prawns. Slice avocados. Cut boiled eggs and broccoli into bite-size chunks. Remove prawns’ tails. Put mayonnaise, soy sauce, and lemon juice in a bowl and mix them. Put all ingredients and mix them together. Now your salad is ready! いただきます!
