Stuffed Eggplant (なすの肉詰め)

Eggplants don’t have strong tastes themselves. But once cooked with meat, they soak its broth well and become very tasty. They are excellent supporting actors! Ingredients (for 3 servings) Eggplant: 3 Minced meat (pork or chicken): 150 g Onion (chopped): 50 g Tofu: 25 g Grated garlic: 1 tsp Dashi powder (if any, otherwise chicken soup powder): 1.5 tsp Black pepper: adjust to taste All-purpose flour: for dusting Oil: for frying Soy sauce: adjust for taste (Optional) Instruction Cut tips off of eggplants and hollow out them with a spoon. Egg Soup with Cabbage (Cabbage Kakitamajiru, キャベツのかき卵汁)

Speaking of traditional Japanese soup, probably you imagine Miso soup. I will introduce this easy and quick recipe. You can use beans sprout for ingredients as well. Ingredients (3 servings) Cabbage leaf: 1 (A) Dashi broth: 600 mL (or 600 mL of water and 1 tsp of Dashi powder) (A) Soy sauce: 1/2 tbsp (A) Mirin: 1 tsp Egg: 1 Starch: 1 tsp with 1.5 tbsp of water Instructions Cut a cabbage leaf into bite-size pieces. Spinach simmered in Dashi Broth (Hourensou Nibitashi,ほうれん草の煮浸し)

Very simple, but you can taste vegetable itself. Ingredients Spinach: 1 bunch Here I used komatsuna (Japanese mustard spinach), looks like spinach. The name ‘komatsuna’ is from the Japanese komatsuna (小松菜), ‘greens of Komatsu’, a reference to Komatsugawa village where it was heavily grown during the Edo period. Fried tofu: 1 Dashi: 300 mL (or 300 mL of water and 2 tsp of dashi powder. Homemade mentsuyu

Read an article on mentsuyu to learn what it is. Mentsuyu is a very useful condiment. You don’t like additives? Make homemade mentsuyu, then!  Ingredients Dashi 150 mL (Check this page to learn how to make dashi.) Soy sauce: 2 tbsp Mirin: 1/2 tbsp Sugar: 1/2 tsp Instructions Put all ingredients in a pot and heat over high until it comes to a boil. Cool down until the liquid becomes warm. If you concentrated type mentsuyu, boil down the liquid to about a third. Store in a jar and keep it in a fridge.
