Okonomiyaki (お好み焼き)

I am not raised in Kansai (Western Japan). So I learned this recipe from my friend from Kansai area. You will be able to make “good” okonomiyaki without any special ingredients. Ingredients (for 3-4 servings) (A) 200g of all purpose flour (A) 2 tbsp of potato starch (A) 1 tsp of baking powder 250 mL of Dashi Broth (or 1 tbsp of Dashi powder and 250 mL of water) 150 g of grated potato 1 tbsp of sake 5 eggs 5 sheets of thinly sliced pork shrimps, squid, etc. 600 g of cabbage (chopped) Bonito flakes and aonori for topping Okonomiyaki sauce Mayonnaise Instructions Add all ingredients (A) in a […]

Sugared Beans (Ama-Natto, 甘納豆)

Sugared beans (Ama-Natto) are totally different from Natto which you know. Peanuts, sweet potatoes and chestnuts are also used to prepare them. I’m going to introduce the recipe for sugared beans using canned red kidney beans. This recipe will help you preparing sugared beans easier and less expensive. Ingredients Canned red kidney beans: 1 Sugar: 200 g Salt: 1/2 tsp Water: adjust to suit your needs Granulated sugar: adjust to suit your needs Instructions Drain water of the canned red kidney beans. Then put the beans in a saucepan. Add some water to cover the beans. Heat it until it comes to a boil. Add 200 g of sugar to […]

Frying pan Takoyaki (フライパンたこ焼き)

Takoyaki is a Japanese ball-shaped snack. Usually, we use takoyaki makers to make takoyaki, but this recipe shows how to make them without takoyaki makers. It’s much more takoyakish than we think! Chop all vegetables into […]

Japanese pan cake with anko (Dorayaki, どら焼き)

Dorayaki is Doraemon’s favourite food. I did not expect that we can make Dorayaki on our own. Good oyatsu (snacks in Japanese) with a glass of milk, or a cup of green tea! Ingredients Eggs: 3 Sugar: 150 g Honey: 1 tablespoon Mirin: 1 tablespoon (otherwise 1 tablespoon of cooking sake and 1 teaspoon of sugar) Baking soda: 1 teaspoon Water (A): 50 cc All-purpose flour: 180 g Water (B): 50 cc Anko: Adjust for your taste (to learn how to prepare anko, check this page.) Instructions In a large bowl, beat 3 eggs and add some sugar. Then add mirin and honey. Whisk well until the mixture becomes fluffy. […]

Daigaku-Imo (大学いも, College Sweet Potatoes)

Daigaku Imo is one of the most popular Japanese snacks. It was originally sold near Tokyo University. I remember my mom cooked it for me. Ingredients 2 large sweet potatoes (cut into random shapes) 2 tablespoons of soy sauce 60 g of sugar 4 tablespoons of Sake (or white wine) 2 tablespoons of black sesame Instruction Wash sweet potatoes well, and cut into random shapes. Put them in water for 10 minutes. Then drain the water. Put the oil in a large frying pan, then place the potatoes. Then, heat at medium high heat for about 3 minutes. Turn to medium-low heat, and deep fry until golden brown. Put soy […]
