Katsudon (かつ丼)

Katsudon is one of Donburi foods, which Tonkatsu and onions simmered with soy-based noodle soup and beaten egg served over freshly cooked rice. The most often used deep fried food for Katsudon is Tonkatsu. However, there are also other kinds of deep-fried foods such as beef cutlet, chicken cutlet, Menchi-Katsu, and shrimp cutlet. Also, there’re some different style foods called Katsudon. The standard Katsudon is introduced in this recipe. Natto and Egg Miso Soup

Everyone knows miso soup. Today, I will introduce miso soup using natto and egg. It’s so mild and creamy, and besides this is the nutrient-rich soup. Ingredients (2 servings) Natto  1 portion cup (without sauce and mustard) Egg 1 Green onion Adjust to suit your needs Dashi broth 2 cups (otherwise 2 cups of water and 1 tsp of dashi powder) Miso 1 tbsp Instruction Heat dashi broth until it comes to a boil. Hot Spring Eggs (Onsen Tamago,温泉卵)

Onsen Tamago is a Japanese egg originally cooked in hot springs, where the white has a soft and unique texture. You can enjoy Onsen Tamago with soy sauce and freshly cooked rice as a part of breakfast. Also, you can enjoy as toppings for gyudon, curry rice. Ingredients Egg: as many as you want. Water Instructions Pour some water into a saucepan. Heat it until it comes to a boil. Place some eggs in the saucepan and turn the heat off. Leave it for 15 minutes without a lid. Soak the eggs in cold water.

Egg Soup with Cabbage (Cabbage Kakitamajiru, キャベツのかき卵汁)

Speaking of traditional Japanese soup, probably you imagine Miso soup. I will introduce this easy and quick recipe. You can use beans sprout for ingredients as well. Ingredients (3 servings) Cabbage leaf: 1 (A) Dashi broth: 600 mL (or 600 mL of water and 1 tsp of Dashi powder) (A) Soy sauce: 1/2 tbsp (A) Mirin: 1 tsp Egg: 1 Starch: 1 tsp with 1.5 tbsp of water Instructions Cut a cabbage leaf into bite-size pieces. Seasoned boiled egg (Ajitama,味玉)

Ramen toppings, a good friend of a glass of beer and a side dish for bento. Use your imagination. You’ll be surprised to know this recipe. Super easy! Ingredients 4 eggs Soy sauce: 150 mL Cooking Sake: 50mL Vinegar: 2 tbsp Sugar: 3 tbsp Instructions Start boiling water. When it comes to a boil, put eggs gently into the water. Gomoku chirashi-sushi (五目ちらし寿司)

When I was a little girl, my mum used to cook this Gomoku chirashi-sushi on Hinamatsuri day (ひな祭り), March 3rd. Looks colourful, but these coloured ingredients are optional. Oyako Don (親子丼, Chicken and Eggs Bowl)

“Oyako” means “a parent and a kid” in Japanese. Not to mention, Oya = Chicken, Ko = Eggs. Ingredients (2 servings) 1 piece of chicken thigh 4 eggs 1/2 of onion consomme bouillon: 1 cube consume broth 2 tablespoons of soy sauce cooking sake : 3 tablespoons ( white wine is also okay) 2 tablespoons of sugar 160 cc of water 400 g of cooked rice Instructions Cut the onion into wedges.
